Bake the baguette on the middle shelf of your oven at 220°C/200°C fan/gas mark 7, 10-12 mins. Once baked, allow to cool, 5 mins. Meanwhile, slice the mozzarella. Tear the Serrano into pieces. Once the bread has cooled slightly, slice in half lengthways. Spread the mayo on the base and the fig jam on the lid of the baguette. Layer the rocket, mozzarella and Serrano ham onto the base. Sandwich on the baguette lid, slice in half and share between 2 plates.
