Instructions

Prep the Mozzarella
1

a) Preheat your oven to 220°C/200°C fan/gas mark 7.

b) Drain the mozzarella and squeeze out as much liquid as you can. Pat dry with kitchen paper, then tear into small pieces.

Cook the Sausage

a) Heat a drizzle of oil in a large frying pan on medium-high heat.

b) Once hot, add the sausage meat and fry until browned, 5-6 mins. Use a spoon to break it up as it cooks, then drain and discard any excess fat. IMPORTANT: Wash your hands and equipment after handling raw meat. The sausage meat is cooked when no longer pink in the middle.

a) Meanwhile, combine in a small bowl the sun-dried tomato paste, vegan 'Nduja (add less if you'd prefer things milder) and the sugar (see pantry for amount).

b) On a floured surface, gently roll and stretch your pizza dough into a circle , approximately 30-35cm wide. TIP: If your pizza dough is too tough and hard to stretch, leave it to rest for 15 min. After this time, your dough will be relaxed and ready to be rolled again.

Add the Toppings

a) Carefully transfer your pizza dough onto a large lined baking tray, then spread the 'Nduja tomato sauce over your pizza base, leaving a 1cm border around the edge.

b) Scatter the cooked sausage meat over the pizza, then sprinkle over the mozzarella pieces.

a) Pop your pizza onto the top shelf of your oven until the cheese is melted and the crust is crisp and golden, 11-13 mins.

Finish and Serve

a) Once baked, pop your pizza onto your serving board.

b) Drizzle over the honey and scatter over the rocket to finish. TIP: If your honey has hardened, put the sachet in a bowl of hot water for 1 min to loosen.
