
Suya (also known as tsire) is a popular Nigerian dish, originating from the Hausa people in Northern Nigeria. Tender and delicious, these meat skewers are characterised in flavour by earthy peanuts and punchy spices. Often grilled, they are a favourite Nigerian street food, typically served with rice, salad, or enjoyed on their own.

a) Preheat your oven to 220°C/200°C fan/gas mark 7.
b) Soak 5 skewers in cold water (this will prevent them from burning). TIP: Keep the remaining skewers for another recipe.
c) Crush the peanuts in the unopened sachet using a rolling pin.
d) Cut the rump steaks into 3cm chunks. IMPORTANT: Wash your hands and equipment after handling raw meat.
e) In a medium bowl, combine the West African style paste, peanut butter, hot sauce (add less if you prefer things milder) and three quarters of the peanuts. Season with salt and pepper.

a) Transfer half the suya style sauce to a small saucepan and set aside for now.
b) Add the pieces of steak to the bowl of suya style sauce and mix to coat.
c) Thread the steak pieces onto the skewers, then pop the skewers onto a baking tray and drizzle with olive oil.
d) Roast on the middle shelf of your oven until the steak is browned all over, 15-18 mins. Turn halfway through. IMPORTANT: The steak is safe to eat when browned on the outside.
e) Meanwhile, trim and thinly slice the spring onion.

a) Next, add the sugar and water for the sauce (see pantry for both amounts) to the saucepan of suya style sauce.
b) When the skewers have 5 mins remaining in the oven, pop the saucepan on medium-high heat. Bring the sauce to the boil, then lower the heat and simmer until thickened, 1-2 mins.
c) When everything's ready, spread your suya style sauce from the saucepan over your serving platter and sprinkle over half the spring onions.
d) Pop your suya beef style skewers on top of the sauce, then sprinkle over the remaining spring onions and peanuts to finish.
