Instructions

Caramelise the Hazelnuts

a) If you don't have a microwave, preheat your oven to 220°C/200°C fan/gas mark 7 for the waffles.

b) In a small saucepan, combine the hazelnuts and half of 1 packet of salted caramel sauce (save the rest for later).

c) Pop on medium heat until the salted caramel becomes stringy and the hazelnuts clump together, 2-4 mins.

d) Place the caramelised nuts onto a plate lined with baking paper in a single layer and pop into the fridge to set, 10-15 mins. TIP: Try to separate the hazelnuts before you place them in the fridge to make them easier to separate before decorating.

Cook the Apples

a) Meanwhile, peel, quarter, core and finely slice the apples.

b) Add the apples, cinnamon, 2 tbsp water and the sugar (see pantry for amount) to a medium saucepan.

c) Heat the apple cinnamon mixture on medium heat until the apples begin to soften, 7-8 mins.

d) Set aside to cool, 5 mins.

Warm the Waffles

a) While the apples cook, combine in a small bowl the ricotta and 1 packet of salted caramel sauce.

b) Warm 4 waffles by popping them in the microwave for 30 secs.

c) If you're using the oven, pop the waffles onto a baking tray and into the oven to warm through, 2-3 mins. TIP: Save the remaining waffle for another recipe.

Stack and Serve

a) Pop 1 waffle on each of your serving plates, then top with a quarter each of the salted caramel ricotta.

b) Place a second waffle on top, creating a waffle stack on each plate.

c) Dollop on the remaining salted caramel ricotta, then scatter over the spiced apple slices and caramelised hazelnuts.

d) Drizzle over the remaining salted caramel sauce to finish.
