Instructions

Mix the Oats

a) In a large bowl, mix the instant oats with the coconut milk, the water and two thirds of the sugar (see pantry for both amounts).

b) Cover and refrigerate overnight.

c) Alternatively, If you prefer your oats to be hot, prep your toppings according to the steps below. Then pop the instant oats, coconut milk, water and two thirds of the sugar (see pantry for both amounts) into a medium saucepan on medium-high heat, stirring regularly until thick and creamy, 3-4 mins.

a) When you're ready to eat, remove the pineapple from the tin and cut into 1cm chunks. Pop the pineapple into a medium bowl.

b) Zest and juice the lime into the bowl of pineapple.

c) Add the remaining sugar, then stir to combine.
