a) Heat a drizzle of oil in a large frying pan on medium-high heat.
b) Once the oil is hot, lay in the bacon rashers and fry until crispy and brown, 3-4 mins on each side. Transfer to a plate lined with kitchen paper. IMPORTANT: Wash your hands and equipment after handling raw meat. Cook bacon thoroughly.
a) While the bacon cooks, finely chop the chives (use scissors if easier).
b) In a medium bowl, whisk the eggs (see pantry for amount) and chives until combined and season with a pinch of salt and pepper.
c) Grate the cheese.
a) Heat a frying pan on medium-high heat with a drizzle of oil.
b) Pour half the eggs into the frying pan, tip the pan to spread the eggs to the edges of the pan and cook until the egg is set, 30-60 secs.
c) Sprinkle half the cheese over the eggs, then fold the egg into quarters.
d) Once cooked, remove from the pan. Repeat with the remaining eggs and cheese. IMPORTANT: Ensure egg whites are fully cooked.
a) Halve the burger buns.
b) Spread the ketchup (see pantry for amount) over the lid and base of each bun.
a) Lay your cheesy egg parcels onto the base of each bun, followed by 4 rashers of bacon each.
b) Sandwich shut with the bun lids and firmly press all the ingredients inside.
a) Heat a drizzle of oil in the large frying pan on medium heat. Once hot, add the sandwiches.
b) Cook, pressing occasionally, until the bread is golden, 1-2 mins per side.
c) Transfer to 2 serving plates to finish.
