a) If you don't have a microwave, heat your oven to 220°C/200°C fan/gas mark 7 for the tortillas.
b) Halve, peel and slice the red onion as thinly as you can. Halve the lime.
c) Pop half the onion into a small bowl and add half the lime juice and sugar for the pickle (see pantry for amount). Add a pinch of salt, mix together and set aside to pickle.
d) Halve the bell pepper and discard the core and seeds. Slice into thin strips. Peel the kiwi, then cut into 1cm chunks. Trim the baby gem, separate the leaves, then tear into bite-sized pieces.
a) Heat a large frying pan on medium-high heat with a drizzle of oil.
b) Once the pan is hot, add the pork mince, pepper and remaining red onion. Fry until the mince has browned, 8-10 mins. Use a spoon to break it up as it cooks. IMPORTANT: Wash your hands and equipment after handling raw mince.
c) When the mince has browned, drain and discard any excess fat. Season with salt and pepper. IMPORTANT: The mince is cooked when no longer pink in the middle.
a) While the mince is frying, in a large salad bowl, combine the remaining lime juice with the olive oil for the dressing and the sugar (see pantry for amount). Season with salt and pepper. Set aside.
a) Once the mince and veg have cooked, stir in the jerk paste. Stir-fry for 1 min.
b) Stir in the honey (see pantry for amount) and remove the pan from the heat.
a) When everything's ready, pile the tortillas (3 per person) onto a plate. Heat them through in the microwave, 850W: 50 secs / 750W: 1 min, until warm and soft.
b) If you're using the oven, pop them into the oven to warm through, 1-2 mins.
c) Add the lettuce leaves to the bowl with the lime dressing. Toss to evenly coat.
a) Share your tacos between plates and top with the lettuce leaves, pork and veg.
b) Finish the tacos with the kiwi and pickled onion.
c) Drizzle over the mayonnaise (see pantry for amount) to finish.
