- Halve the bell pepper and discard the core and seeds. Chop into 1cm chunks.
- Heat a drizzle of oil in a large saucepan on medium-high heat.
- Once hot, add the chorizo and pepper.
- Fry, 5-6 mins. Stir while it cooks.
- Meanwhile, preheat your grill to high. Cut the ciabattas into 1cm slices.
- Pop the ciabatta slices onto a medium baking tray.
- Drizzle with oil and season with salt and pepper.
- Grill until golden, 3-5 mins.
- Add the smoked paprika, mixed beans and liquid from the carton, passata, red wine stock paste, honey and water for the sauce (see pantry for both).
- Simmer, 4-5 mins.
- Add the spinach in handfuls, making sure it's piping hot, 1-2 mins.
- Mix in the butter (see pantry). Season with salt and pepper.
- Share the stew between serving bowls.
- Sprinkle over the cheese.
- Serve the toasts alongside for dipping and scooping.
