Get Started

a) Heat a large frying pan over high heat with a drizzle of oil.
b) Once hot, add the mince and cook until golden brown, 3-4 mins. Break it up with a spoon as it cooks. IMPORTANT: Wash your hands after handling raw meat.
c) Once browned, drain any excess fat from the beef, then add the Central American style spice mix to the pan and cook, stirring, for 2 mins.

b) Season with salt and pepper and simmer until thickened, 5-6 mins. TIP: Add a splash of water if the beef mixture is looking a little dry.

b) Grate the Cheddar cheese.

a) Halve the ciabattas.
b) Place the ciabattas onto a baking tray, cut-side up, and pop under the grill to toast, 3-4 mins. Once toasted, remove the tray.
c) Once the beef is cooked, spoon over the ciabattas. IMPORTANT: The mince is cooked when no longer pink in the middle.
d) Sprinkle over the grated cheese and grill until melted, 3-4 mins.

a) Meanwhile, pour the cider vinegar and olive oil (see ingredients for amount) into a medium bowl.
b) Season with salt, pepper and a pinch of sugar (if you have some). Mix well.
c) Chop the tomatoes into 1cm pieces then add them to the bowl.

Serve

a) Just before you are ready to serve, add the pea shoots to the bowl and toss together.
