Wake up and smell the bacon (and blueberries)! Take your tastebuds to the States with these American style stacks. Layering fluffy pancakes with creme fraiche and a berry compote swirl, this is a brunch worth getting stuck into!

Preheat your oven to 200°C. Heat a large frying pan on medium heat (no oil). Once hot, add the flaked almonds and dry-fry, stirring regularly, until lightly toasted, 3-4 mins. TIP: Watch them like a hawk as they can burn easily. When nicely toasted, transfer them to a bowl and set aside.


Heat a drizzle of oil in the now empty frying pan on medium-high heat. When hot, lay in the bacon rashers and fry until crispy and brown, 3-4 mins on each side. When cooked, transfer to a plate. Pour over half the honey and turn the bacon over in it so it is nicely coated. Then cover to keep warm. IMPORTANT: Wash your hands and equipment after handling raw meat. Cook bacon thoroughly.


While the bacon cooks, pop the pancakes onto a baking tray and into the oven to warm through, 2-3 mins.


When the pancakes have warmed through, start to build your stack! Equally share the creme fraiche between all the pancakes, dollop the red berry compote onto each as well. Using a teaspoon, gently swirl the creme fraiche and compote until ripples form. TIP: You don't want to mix completely, so be gentle.


Scatter over some blueberries, onto each pancake, then stack one onto another, creating a stack of 2 (1 stack per person).


Next, arrange the honey coated bacon on top. Finally, scatter over the toasted almonds and drizzle over the remaining honey. Pancake heaven! Enjoy.
