Instructions

1

Chop the turkey into 2cm chunks. Set aside in a bowl. Wash your hands and your chopping board! Grate the lime zest. Grate the cheddar cheese.

2

Heat a drizzle of oil in a large frying pan on medium high heat. Add the turkey and Central American spice mix. Stir together and cook until browned and cooked through, 6-7 mins. Then add the lime zest and half the honey, stir together and fry until the turkey is golden brown, 1 minute more. Tip: The turkey is cooked when it is no longer pink in the middle.

3

Add the spinach to the pan, stir and cook until wilted, 2-3 mins. Remove the pan from the heat. Add half the cheese and sour cream. stir together until everything is combined (if your pan isn't big enough, just pop everything in a mixing bowl to stir it together). Lay a tortilla on your chopping board and put a couple of spoonfuls of filling in a line down the centre. Leave a 2-3cm gap at either end. Get ready to roll...

4

Fold the sides where you left the gap towards the filling into the centre. Then roll up from the bottom so you have an enclosed parcel. Repeat with the others. Drizzle some oil into a baking tray, lay in the wraps seam-side down. Sprinkle over the cheese and drizzle with a little oil. Bake on the top shelf of your oven until browned, 9-12 mins. Tip: If some of the cheesy sauce seeps out a bit, don't worry, it'll still be yum!

5

In the meantime, chop the tomatoes into roughly 1cm pieces. Remove the root from the baby gem lettuce and cut into 1cm wide slices. Remove the top and bottom from the cucumber, halve lengthways then slice into thin half moons, cut some of the cucumber into batons if your children don't like a salad! Pop the salad ingredients into a large bowl (not the cucumber batons) and toss together.

6

Squeeze half the lime juice into a small bowl and add the olive oil (amount specified in ingredient list) and remaining honey. Add a pinch of salt and pepper. Taste, and add more lime juice if you like things zesty! Remove the taquitos from your oven and serve two per person. If your children like dressing, dress the salad, if not serve them first then dress the salad for the adults. Serve the salad on the side and enjoy!
