- Boil a half-full kettle.
- Pour it into a saucepan with ¼ tsp salt on high heat.
- Boil the rice, 10-12 mins.
- Once cooked, drain, pop back in the pan and cover.
- Meanwhile, heat a frying pan on medium-high heat (no oil).
- Once hot, fry the mince, 5-6 mins. Break it up as it cooks, then drain the fat. Season with salt and pepper. IMPORTANT: Wash hands and utensils after handling raw meat. Cook so there's no pink in the middle.
- Meanwhile, drain the sweetcorn.
- Halve the lime.
- In a large bowl, mix the sweetcorn, coleslaw mix, a good squeeze of lime juice and the mayo.
- Season with salt and pepper.
- Add the chicken stock paste, paprika, hot sauce, water, honey and butter (see pantry for all three amounts) to the pork. Fry 1-2 mins.
- Share the rice between serving bowls.
- Top with the buffalo style pork, corn slaw and rocket.
- Drizzle some oil and squeeze some lime juice over the rocket leaves to finish.
