Quick Prep

  • Cut each chicken breast into 2cm chunks. TIP: Notice a stronger smell from your chicken? Don’t worry, this is normal due to packaging we use to keep it fresh. IMPORTANT: Wash hands and utensils after handling raw meat.
  • Halve the bell pepper and discard the core and seeds. Chop into 1cm chunks.
Get Frying

  • Heat a drizzle of oil in a large frying pan on medium-high heat.
  • Once hot, add the chicken and pepper. Fry, 8-10 mins. Season with salt and pepper.
  • Halfway through, add Mediterranean style seasoning. Stir to coat the veg and chicken. IMPORTANT: Cook so there's no pink in the middle of the chicken.
Slaw Time

  • Meanwhile, peel and grate the garlic (or use a garlic press). Put the mayo into a medium bowl. Add the garlic. Season with salt and pepper. Mix.
  • Add the red cabbage to the mayo. Mix to coat. Set aside.
  • Trim the cucumber, then cut into small 1cm pieces. Put in a bowl. Add the yoghurt sauce. Mix.
Dinner’s Ready!

  • Once cooked, taste the chicken and add salt and pepper if needed.
  • In sections, serve the chicken, slaw and cucumber yoghurt between bowls.
  • Crumble over the Greek style salad cheese.
  • Serve the tortilla chips alongside for scooping.
