
Elevate mealtimes with vibrant Fajita Style Fried Vegetables. Topped with Cheddar cheese, coriander and lime, this side dish is an easy way to make dinnertimes feel extra special. We love this side dish paired with burritos, salads, nachos and chillis.

a) Halve, peel and slice the onions into 1cm wide strips.
b) Halve the bell peppers and discard the core and seeds. Slice into 1cm wide strips.
c) Heat a drizzle of oil in a large frying pan on medium-high heat.
d) Add the onions and peppers to the pan and season with salt and pepper. Stir-fry until softened, 14-16 mins.

a) While onions and peppers cook, peel and grate the garlic (or use a garlic press).
b) Roughly chop the coriander (stalks and all). Grate the cheese. Quarter the lime.
c) Once the veg has softened, add the smoked paprika, Mexican style spice mix, garlic, three quarters of the coriander and the sugar (see pantry for amount) to the pan.
d) Squeeze over the juice from half the lime wedges, then toss to coat the veg in the spices.

a) Add half your fajita style fried vegetables to your serving bowl and sprinkle over half the cheese.
b) Repeat with the remaining veg and cheese, then sprinkle over the remaining coriander.
c) Serve with the remaining lime wedges for squeeing over to finish.
