a) Finely chop the chives (use scissors if easier).
b) Grate the cheese.
c) Roughly chop the kimchi.

a) Heat a drizzle of oil in a large frying pan on medium-high heat.
b) Once the oil is hot, lay in the smoked ham slices and fry until lightly charred, 1-2 mins on each side. Transfer to a plate lined with kitchen paper.
c) In a medium bowl, whisk together the eggs (see pantry for amount), chives and kimchi pieces until combined. Season with a pinch of salt and pepper.

a) Heat a medium frying pan on medium-high heat with a drizzle of oil.
b) Pour half the eggs into the frying pan, tip the pan to spread the eggs to the edges of the pan and cook until the egg is set, 30-60 secs.
c) Sprinkle half the cheese over the eggs, then fold the egg into quarters.
d) Once cooked, remove from the pan. Repeat with the remaining eggs and cheese. IMPORTANT: Ensure egg whites are fully cooked.

a) Halve the burger buns.
b) Spread the mayo over the lid and the ketchup (see pantry for amount) over the base of each bun.

a) Lay your cheesy egg parcels onto the base of each bun, the sprinkle over the sugar (see pantry for amount).
b) Top the egg with 2 slices of ham each.
c) Sandwich shut with the bun lids and firmly press all the ingredients inside.

a) Optionally, for a more authentic dish, serve your breakfast sandwich toasted by heating a drizzle of oil in the large frying pan on medium heat. Once hot, add the sandwiches. Cook, pressing occasionally with a spatula or heavy bottomed pan, until the bread is golden, 1-2 mins per side.
b) Transfer to 2 serving plates to finish. TIP: Finish each sandwich with a drizzle of ketchup and mayo if you wish for a more authentic dish.
