
This Asian Style Smoked Salmon Salad is delicious and so quick to create. Simply prep the dressing, chop the cucumber, and add the ingredients together to form a delightfully easy lunchtime meal.

a) Halve the lime. Trim the cucumber, then halve lengthways. Cut lengthways into roughly 1cm wide strips, then cut into 1cm pieces widthways.
b) In a medium bowl, combine the ginger puree, sesame oil and honey (see pantry for amount).
c) Squeeze in the lime juice and stir to combine.

a) Add the sliced carrot and cabbage mix and baby leaves to the bowl of dressing.
b) Add the cucumber.
c) Toss the vegetables in the dressing to coat well.

a) Tear the salmon slices into bite-sized pieces.
b) Share the salad between 2 serving bowls, then top with the smoked salmon pieces.
c) Sprinkle over the sesame seeds to finish.
