Drizzle with oil, sprinkle over the mixed herbs, season with salt and pepper, then toss to coat. Spread out in a single layer. TIP: Use two baking trays if necessary.
When the oven is hot, roast on the top shelf until golden, 25-35 mins. Turn halfway through.

Meanwhile, halve any thick broccoli stems lengthways.
Lay the pork steaks onto a plate.
Drizzle with oil, sprinkle the peri peri seasoning over both sides of the steaks and season with salt and pepper. IMPORTANT: Wash your hands and equipment after handling raw meat.

Pop the Tenderstem® broccoli and tomatoes onto a baking tray.
Drizzle with oil, season with salt and pepper, then toss to coat. Spread out in a single layer.
When the potatoes are about halfway through cooking, roast the veg on the middle shelf of your oven until tender, 10-12 mins.

Meanwhile, heat a drizzle of oil in a large frying pan on medium-high heat. IMPORTANT: Wash your hands and equipment after handling raw meat.
Once the oil is hot, add the pork steaks. Fry until browned, 2-3 mins on each side.
Reduce the heat to medium and fry for an additional 4-6 mins, turning every couple of mins.

Once the pork steaks are cooked, transfer to a clean board and allow to rest. Then, thinly slice them. IMPORTANT: The pork is cooked when no longer pink in the middle.

Transfer the pork steaks, potatoes and veg to your plates.
Serve the aioli on the side for dipping.
