Pre-heat your oven to 200 degrees. Cut the tomatoes in half and then cut each half into three wedges. Put your tomato wedges onto a baking tray and drizzle on a glug of oil. Season the tomatoes with half of the garlic salt and pop them into the oven for 15 mins.

Your next job is to make your cheesy croutons. Cut the ciabatta rolls in half as though you were making a sandwich. Keep the bottoms to one side and then cut the tops into large croutons (see picture). Pop the croutons into a bowl and drizzle on a glug of olive oil. Add half of the hard Italian cheese, mix well and then pop them onto the baking tray in the oven next to your tomatoes. Bake them for 10-12 mins until they are golden and crunchy.

Finish off your last few jobs, grate the Cheddar cheese and mix it with the leftover hard Italian cheese and creme fraiche in a small saucepan. We will make the cheese sauce later.

Cut the onion in half through the root, peel and then slice into thin half moon shapes.

Heat a frying pan over medium-high heat add a splash of oil. Place the ciabatta bottoms in the pan cut side down and press down against the pan to make sure they toast. Cook for 2 mins or until golden brown. Remove from the pan and keep to one side. Turn the heat to high and get ready to cook your steaks.

Rub a glug of oil all over your steaks. When your pan is very hot, cook your steaks for 3-4 mins on each side if you like your steak medium rare like us. Cook them for 8 mins on each side if you like them well done. Sprinkle on the leftover garlic salt and then remove your steaks from the pan and allow to rest on your chopping board.

As your steaks rest, cook your sliced onions. Add a splash of oil to the pan and stir-fry for 3-5 mins or until they are nicely softened and browned.

Just before serving, warm your cheese sauce over medium heat until the sauce is bubbling and the cheese has all melted. Season with black pepper.

Pop your toasted ciabatta bottoms in the centre of each plate. Cover the ciabatta with a spoonful of the cheese sauce. Arrange the rocket leaves around the plate and then pop some tomato wedges and croutons on top of the rocket. Slice your steak into super thin slices and arrange on top of your ciabatta. Pop the cooked onions on top of your steak and serve your leftover cheese sauce on the side. Enjoy!
