  • Preheat your oven to 220°C/200°C fan/gas mark 7. Chop the sweet potatoes into 2cm wide wedges (no need to peel).
  • Pop the wedges onto a large baking tray. Drizzle with oil, season with salt and pepper, toss to coat. Spread out in a single layer.
  • Roast on the top shelf until golden, 25-35 mins. Turn halfway through.
  • Meanwhile, drain the sweetcorn.

  • When the sweet potato has 10 mins remaining, heat a large frying pan on medium-high heat with a drizzle of oil.
  • Add the beef (discard any juice from the packet), passata, chipotle paste, sugar (see pantry) and chicken stock. Season with salt and pepper. Use a spoon to break up the beef as it cooks. Simmer until thickened, 4-5 mins. IMPORTANT: Ensure the beef is piping hot throughout.

  • Pile the tortillas (3 per person) onto a plate. Heat them through in the microwave, 850W: 50 secs / 750W: 1 min, until warm and soft.
  • If you don't have a microwave, pop them into the oven to warm through, 1-2 mins.
  • Lay the tortillas onto your serving plates (3 per person). Top with the rocket, chipotle beef and sweetcorn. Drizzle on the soured cream, crumble on the cheese and scatter over the crispy onions.
  • Serve the sweet potato wedges alongside.
