  • Preheat your oven to 240°C/220°C fan/gas mark 9.
  • Pop the sausages onto a baking tray.
  • When the oven is hot, roast on the top shelf until browned and cooked through, 12-14 mins. Turn halfway through. IMPORTANT: Wash your hands and equipment after handling raw meat. The sausages are cooked when no longer pink in the middle.

  • Meanwhile, heat a drizzle of oil in a frying pan on high heat.
  • When hot, fry the mushrooms and soffrito mix, 5-7 mins. Season with salt and pepper.
  • Meanwhile, drain and rinse the black beans
  • Halve the ciabatta.
All Together

  • Once the mushrooms have browned, add the Central American style spice mix, passata, black beans, chicken stock paste, sugar and water (see pantry for both).
  • Simmer until thickened slightly, 3-4 mins. 
  • Once cooked, remove the beans from the heat. Stir in the BBQ sauce. Taste and season with salt and pepper if needed.
Dinner's Ready!

  • Pop the ciabatta into the oven to warm through, 2-3 mins.
  • When everything's ready, slice the sausages widthways.
  • Share smoky beans between your bowls. Top with the sausages
  • Serve the ciabatta alongside for dipping and scooping to finish.
