Bake the baguettes on the middle shelf of the oven at 220°C/200°C fan/gas mark 7 for 10-12 mins. Heat a drizzle of oil in a frying pan on medium-high heat.
Once the oil is hot, add the bacon lardons. Stir-fry until golden, 4-5 mins. IMPORTANT: Wash your hands and equipment after handling raw meat. Cook bacon thoroughly.
Halve the tomatoes. Slice the cooked baguette in half lengthways, then widthways. Spread with the smashed avocado, then layer in the bacon, rocket and tomatoes. Serve any remaining salad on the side.

Cook the baguette as per the pack instructions. While the bread bakes fry the bacon as per pack instructions. Halve the tomatoes.
To prepare: Fill the baguette with smashed avo, tomato halves, cooked bacon and a handful of rocket. Enjoy!
