Instructions

  • Halve the bell pepper and discard the core and seeds. Chop into 1cm chunks.
  • Heat a drizzle of oil in a large saucepan on medium-high heat.
  • Once hot, add the chorizo and pepper.
  • Fry, 5-6 mins. Stir while it cooks.

  • Meanwhile, preheat your grill to high. Cut the ciabattas into 1cm slices.
  • Pop the ciabatta slices onto a medium baking tray.
  • Drizzle with oil and season with salt and pepper.
  • Grill until golden, 3-5 mins.

  • Add the smoked paprika, mixed beans and liquid from the carton, passata, red wine stock paste, honey and water for the sauce (see pantry for both). 
  • Simmer, 4-5 mins. 
  • Add the spinach in handfuls, making sure it's piping hot, 1-2 mins.
  • Mix in the butter (see pantry). Season with salt and pepper.

  • Share the stew between serving bowls.
  • Sprinkle over the cheese.
  • Serve the toasts alongside for dipping and scooping.
