1. Prep onion, garlic, coriander, peanuts, lime, courgette. Make coriander pesto with coriander, peanuts, lime juice.
2. Char courgette, fry chicken then roast - bit of honey on at the end (should i just roast courgette too?)
3. Cook spaghetti
4. make sauce with onion, garlic, thai spice, stock, thai paste and coconut milk,
5. Simmer until cooked, then add spinach. add spaghetti
6. Serve with crougettes, sliced chicken and coriander pesto on top

lime is seasonality 3? also i'm over budget so should i just remove coriander and just do sprinkled peanuts on top and lime in the sauce?

  • roast the courgette
    - remove the coriander
    - try with a lemon
