a) Trim the pak choi, then separate the leaves. Cut any larger leaves in half lengthways down the middle.
b) Trim the green beans.
c) Crush the peanuts in the unopened sachet using a rolling pin.
a) Heat a drizzle of oil in a large frying pan on medium-high heat.
b) Once the pan is hot, add the green beans and stir-fry until starting to char, 3-4 mins.
c) Turn the heat down to medium and add the pak choi. Cook until the beans and pak choi are tender, 3-4 mins. Remove the pan from the heat.
a) Once the veg is tender, add the ginger, garlic & lemongrass puree, soy sauce and Thai style spice mix, then toss to combine and fry until fragrant, 30 secs.
b) Pop your Thai style fragrant greens into a serving bowl and drizzle over the sweet chilli sauce.
c) Sprinkle over the peanuts to finish.
