Preheat your oven to 200°C. Pop the sweet potato fries onto a large baking tray. Drizzle with oil, season with salt and pepper then toss to coat. Spread out in a single layer and roast on the top shelf of your oven until soft and golden, 20-25 mins, turning halfway through. TIP: Use two baking trays if necessary, you want the fries nicely spread out.

Meanwhile, halve the pepper and discard the core and seeds. Slice into thin strips, then chop into roughly 1cm pieces. Grate the cheese. Drain and rinse the beans in a sieve. Slice the brioche buns through the middle (but not all the way through-like you would for a hot dog). Keep them to one side for now.

Add the pepper, tomato puree, Central American spice mix, stock paste and water (see ingredients for amount) to a large saucepan (with a lid). Add the mixed beans, then use a fork to lightly mash some of them. Stir well to ensure everything is combined. Pop the pan on medium-high heat and bring to the boil. Then reduce the heat to the lowest setting, put the lid on and allow it to simmer gently until thickened, 10-12 mins. Remove from the heat when ready.

Make yourself a cuppa, put your feet up and relax until the beans are cooked!

When everything is ready and you are just about to serve, pour the BBQ sauce into the beans. Stir well to combine, taste and season with salt and pepper if needed.

Divide the brioche buns between your plates. Generously spoon the BBQ beans into the buns and top with the cheese. Serve the BBQ bean chilli dogs with the sweet potato fries alongside. As easy as can be! Enjoy.
