1

a) Preheat your oven to 220°C/200°C fan/gas mark 7.

b) Tear the ciabatta into roughly 2cm chunks.

c) Drain the sweetcorn in a sieve.

a) Pop the ciabatta onto a baking tray in a single layer. 

b) Drizzle with oil, sprinkle over the mixed herbs and season with salt and pepper. Toss to coat well.

c) Bake the croutons on the middle shelf until golden, 8-10 mins, then remove from the oven and set aside.

Fry Time

a) Meanwhile, heat a drizzle of oil in a large frying pan on medium-high heat.

b) Once hot, add the prawns and sweetcorn to the pan. Sprinkle over the Central American style spice mix and season with salt and pepper

c) Fry until golden brown on the outside and cooked through, 4-5 mins. IMPORTANT: Wash your hands and equipment after handling raw prawns. They're cooked when pink on the outside and opaque in the middle.

a) While the prawns fry, quarter, core and slice the apple (no need to peel).

b) Trim the baby gem, separate the leaves, then tear into bite-sized pieces.

a) Once the prawns is cooked, drizzle over the honey (see pantry for amount) and toss to glaze.

b) In a salad bowl, combine the ranch dressing and olive oil for the dressing (see pantry for amount). Season with salt and pepper.

c) Add the ciabatta croutons, apple, baby gem, sweetcorn and chicken to the dressing and toss to coat.

Serve Up

a) Share the salad between your serving bowls. 

b) Sprinkle over the hard Italian style cheese to finish.
