Instructions

  • Boil a full kettle.
  • Meanwhile, cut the Tenderstem® broccoli into thirds. Halve and peel the onion, then cut each half into 4 wedges. Separate the layers.
  • Pour the boiled water into a saucepan with 0.5 tsp salt on high heat.
  • Boil the noodles and broccoli, 4 mins. Once cooked, drain and rinse under cold water.

  • While the noodles boil, heat a drizzle of oil in a frying pan on high heat.
  • Add the mushrooms and onion. Fry, 5-6 mins. Season with salt and pepper.
  • Sir in the char siu, soy sauce, ginger puree and water for the sauce (see pantry). Bring to the boil and simmer, 2-3 mins.

  • Add the cooked noodles and broccoli to the sauce. Toss to coat and simmer, 1 min.
  • Add a splash of water if it's a little thick.
  • Taste and season with salt and pepper if needed.

  • Share the noodles between your bowls.
  • Scatter over the peanuts.
