How To Make a Stir-Fry Chinese Recipe

Stir-frying is a quick and easy cooking technique that has become a standard method in many Chinese recipes. Read the basic tips for stir-frying here!
  • Heat the pan: Whether you use a wok or a sauté pan, you should always make sure the surface is hot before you start stir-frying. Heat an empty pan over high heat for 5-10 minutes before adding the oil. Choose an oil that you can heat over high heat. Allow the oil to heat for at least one minute before adding the other ingredients to the stir-fry.
  • Fry in small portions: Never add all the ingredients to the pan at once, as this will steam your food instead of stir-frying. If you use meat, fry it first in small portions and then remove it from the pan. Then cook the vegetables and add everything back together at the end.
  • Prepare the basics: Cook the rice or noodles before you start stir-frying. Stir-frying doesn't take long, so once the meat and vegetables are done, you can immediately add the rice or noodles. This way everything is ready at the right time.

  • Finish with the sauce: A stir-fry sauce should be sweet, sour and salty. For example, make a mix of soy sauce, oyster sauce, mirin and rice vinegar.
