This recipe is speedy, super simple, and a sure way to elevate meals. It's tasty drizzled over Asian, Italian and Mexican inspired food, as well as brunch dishes such as eggs and avocado. Not great with heat? Simply adjust the amount of chilli flakes to taste more of the aromatic sesame.

a) In a small bowl, combine the chilli flakes and peanuts.
b) Put the sesame seeds into a separate medium bowl.
a) Pour the sesame oil into a small saucepan on high heat until the oil just begins to smoke, about 1.5-2 mins. IMPORTANT: It could take more or less time to smoke, depending on your hob.
b) Once smoking, add the chilli flakes and peanut mixture to the oil until the peanuts are very lightly browned, 1 min. IMPORTANT: It could take more or less time to smoke, depending on your hob.
a) Immediately pour the hot oil, peanuts and chilli flakes over the sesame seeds in the bowl. The oil is very hot, so the sesame seeds will bubble up a little.
b) Allow the oil to cool fully, 20-30 mins.
c) Once fully cool, stir the crispy onions, sugar and salt (see pantry for both amounts) into the crispy chilly oil.
d) Drizzle over your favourite Asian inspired dishes.
