Cooking Steps

Get Prepped
1

a) If you don't have a microwave, heat your oven to 220°C/200°C fan/gas mark 7 for the tortillas.

b) Trim the baby cucumber, then cut into small 1cm pieces.

c) Trim the baby gem, halve lengthways, then thinly slice.

d) Cut the tomato into 1cm chunks. Cut the lime into wedges.

Make the Dressing and Raita

a) In a large bowl, mix the sugar and olive oil for the dressing (see pantry for both amounts) with a good squeeze of lime juice

b) Season with salt and pepper, then set the dressing aside. 

c) In a medium bowl, combine the yoghurt sauce and cucumber - this is your raita

Fry Time

a) Heat a drizzle of oil in a large frying pan on medium-high heat.

b) Once hot, add the beef mince to the pan and stir-fry, 5-6 mins. IMPORTANT: Wash your hands and equipment after handling raw mince. It's cooked when no longer pink in the middle.

Add the Flavour

a) Stir the North Indian style spice mix, soy sauce and chilli flakes (add less if you'd prefer things milder) into the mince.

b) Fry for 1 min more, then stir in the mango chutney.

c) Taste and season with salt and pepper if needed and remove from the heat. 

Warm the Tortillas

a) Pile the tortillas (3 per person) onto a plate. Heat them through in the microwave, 850W: 50 secs / 750W: 1 min, until warm and soft.

b) If you're using the oven, pop them into the oven to warm through, 1-2 mins.

c) Meanwhile, add the baby gem and tomato to the dressing bowl and toss together.

Serve

a) Fill the warmed tortillas with the salad then the spiced beef mince

b) Spoon on the cucumber raita.

c) Serve any remaining lime wedges on the side for squeezing over. TIP: Tacos are best enjoyed eaten by hand - tuck in the end of the tortillas and get stuck in!
