Instructions

  • Boil a half-full kettle.
  • Pour it into a saucepan with 0.5 tsp salt on high heat.
  • Boil the orzo, 10 mins.
  • Once cooked, drain in a sieve.

  • Meanwhile, heat a drizzle of oil in a frying pan on high heat.
  • Once hot, fry the beef and mushrooms, 5-6 mins.
  • Break up the mince as it cooks, then drain the fat.
  • Season with salt and pepper. IMPORTANT: Wash hands and utensils after handling raw meat. Cook so there's no pink in the middle.

  • Stir the passata, red wine stock paste, mixed herbs, sugar and water (see pantry for both amounts) into the beef.
  • Simmer, 1-2 mins.
  • Stir the sun-dried tomato paste, cooked orzo and cheese into the sauce.
  • Season with salt and pepper.

  • Serve the orzo bolognese in bowls.
  • Top with the rocket leaves.
