a) Halve and juice the lime into a large bowl.
b) Halve the chilli lengthways, deseed, then finely chop (use less if your prefer).
c) Roughly chop the coriander (stalks and all).
d) Add the chilli, coriander, sugar and olive oil (see pantry for amount) to the lime juice. Season with salt an pepper and mix to combine.
a) Peel the kiwi, then cut into 1cm chunks.
b) Trim the cucumber and halve lengthways, then slice into 0.5cm thick half-moons.
c) Trim the baby gem, separate the leaves, then tear into bite-sized pieces.
a) Add the kiwi, cucumber and lettuce to the dressing, then crumble in three quaters of the feta.
b) Toss to coat the veg in the dressing then pop into your serving bowl.
c) Crumble over the remaining feta to finish.
