Bring a large saucepan of water to the boil with 1/2 tsp salt for the noodles.
Zest and halve the lime (see ingredients for amount).
Peel and grate the garlic (or use a garlic press).
In a medium bowl, add the chilli flakes (add less if you'd prefer things milder), lime zest, half the garlic, half the soy sauce and the olive oil for the marinade (see pantry for amount).
Squeeze in some lime juice and stir to combine.
Next, drain the prawns. Add them to the bowl and mix to coat well in the marinade. IMPORTANT: Wash your hands and equipment after handling raw prawns.
Meanwhile, once the water is boiling, add the noodles and cook until tender, 4 mins.
Once cooked, drain in a sieve and run under cold water to stop them sticking together.
Heat a drizzle of oil in a large frying pan on high heat.
Once hot, add the sliced mushrooms and prawns and stir-fry, 2-3 mins.
Add the coleslaw mix and stir-fry until tender, 2-3 mins. Stir in the remaining garlic and fry until fragrant, 30 secs.
Once fragrant, add the teriyaki sauce, water for the sauce (see pantry for amount) and the remaining soy sauce to the pan.
Bring to a boil, then lower to a simmer. Simmer for 1-2 mins, until the sauce has thickened. IMPORTANT: The prawns are cooked when pink on the outside and opaque in the middle.
Once the sauce has thickened, add the cooked noodles and a squeeze of lime juice to the pan and toss to coat in the sauce.
Share the noodles between your bowls.
Cut any remaining lime into wedges and serve alongside for squeezing over.
