Use a tablespoon to scoop out the flesh in one piece, then cut into chunks. Slice the tomato. Chop the halloumi into 2cm chunks, then fry until golden, turning frequently, 6-7 mins. Pop the rocket, avocado and tomato into a serving dish. Top with halloumi chunks to finish. Enjoy!
