A twist on the classic flavours of a BLT. This lunchtime roll layers crispy bacon, slices of fresh tomato and a handful of rocket. A dollop of onion marmalade and mayo bring a little sweetness to the saltiness of the bacon to ensure your lunchtime meal is a memorable one.

a) Heat a drizzle of oil in a large frying pan on medium-high heat.
b) Once hot, lay in the bacon rashers and fry until crispy and brown, 3-4 mins on each side.
c) Once cooked, transfer to a plate lined with kitchen paper. IMPORTANT: Wash your hands and equipment after handling raw meat. Cook bacon thoroughly.
a) While the bacon cooks, thinly slice the tomatoes.
b) Halve the seeded rolls lengthways.
a) Spread the mayo (see pantry for amount) over the bases of the rolls.
b) Repeat with the onion marmalade on the lids.
c) Layer the bacon, tomato slices and rocket inside your rolls, then sandwich on the lids.
