
This super speedy salad brings a little taste of the Mediterranean to lunchtime with precooked chicken, olives and pepper. Finish with Greek style cheese and French dressing for a lunch which is as quick to prepare as it is delicious.

a) Halve the pepper and discard the core and seeds. Slice into thin strips.
b) Halve the olives.
c) Cut the cooked chicken slices into bite-sized pieces.

a) In a large bowl, combine the baby leaf mix, pepper slices, olives and chicken slices.
b) Crumble in half the Greek style salad cheese.
c) Pour over the Ranch and toss to coat.

a) Transfer the dressed salad to 2 serving bowls.
b) Crumble over the remaining Greek style salad cheese to finish.
