Halve, peel and chop the shallot into small pieces.
Trim the green beans and chop into thirds.
Drain and rinse the lentils in a sieve.
Zest and halve the lime.
Roughly chop the peanuts.
Heat a splash of oil in a saucepan over medium high heat.
When hot, add the shallot and green beans. Season with salt and pepper.
Cook until beginning to soften, 3-4 mins. Stir frequently.
Add the Goan Xacuti spice mix and cook until fragrant, another minute.
Pour the coconut milk into the saucepan along with the water (see ingredients for amount).
Lower the heat to a simmer and cook until the green beans are tender, another 4-5 mins.
After 3 mins, stir in the lentils and heat through for 1-2 mins.
Meanwhile, put a frying pan on high heat (no oil).
When hot, add the tortillas one at a time and cook until charred, 30 seconds on each side.
Transfer to a plate and cover with foil to keep warm.
When the tortillas are done, add a splash of oil to the pan and stir fry the prawns.
Cook for 3-4 mins, stirring frequently.
IMPORTANT: The prawns are cooked when pink on the outside and opaque in the centre.
When the prawns are cooked, remove from the heat and season with salt, pepper and a squeeze of lime.
Season the lentils to taste with salt and pepper and stir in the lime zest and a squeeze of juice.
Share the lentils between your bowls and top with the prawns.
Finish with a sprinkle of peanuts and serve the tortillas alongside for mopping up the sauce!
