Cooking Instructions and Tips

Cook Rice

  • Boil a full kettle. Pour it into a saucepan with 1/4 tsp salt on high heat.
  • Boil the rice, 10-12 mins.
  • Once cooked, drain, pop back in the pan and cover.
Fry Time

  • Meanwhile, slice the pepper into strips. Drain the prawns.
  • Heat a drizzle of oil in a frying pan on medium-high heat.
  • Once hot, add the prawns and pepper. Season with salt and pepper. Stir-fry, 4-5 mins. IMPORTANT: Wash hands and utensils after handling raw prawns. Cook so they're opaque in the middle.
Add Flavour

  • Next, stir in the West African style paste, peanut butter, coconut milk and honey (see pantry).
  • Bring to a boil. Simmer, 2-3 mins
  • Add the spinach in handfuls, making sure it's piping hot, 1-2 mins.
  • Add a splash of water if you feel it needs it.
Dinner's Ready!

  • Share the rice between your bowls.
  • Top with the prawns.
