Moussaka usually consists of layered veg such as aubergine and or potatoes sandwiched between a tomato-based sauce and topped with a creamy béchamel style sauce. Inspired by the same flavours, this speedy rice bowl is topped with a tomatoey aubergine and beef sauce, then a drizzle of creme fraiche.

Cooking Instructions and Tips

  • Boil a half-full kettle.
  • Pour it into a saucepan with 0.25 tsp salt on high heat.
  • Boil the rice, 10-12 mins.
  • Once cooked, drain, pop back in the pan and cover.

  • Meanwhile, heat a frying pan on medium-high heat (no oil).
  • Once hot, fry the beef, 5-6 mins. Break up the mince as it cooks, then drain the fat. Season with salt and pepper. IMPORTANT: Wash hands and utensils after handling raw meat. Cook so there's no pink in the middle.
  • In the meantime, open the remaining sachets.

  • Add the passata, chicken stock paste, oregano, cinnamon, peas, butter, honey (see pantry for both) and three quarters of the cheese to the beef.
  • Bring to the boil. Simmer, 2-3 mins.
  • Taste and season with salt and pepper if needed.

  • Share the rice between your bowls.
  • Top with the beef.
  • Drizzle over the creme fraiche and sprinkle over the remaining cheese.
  • Top with a handful of rocket. Finish with a drizzle of oil.
