Our Central American Style Pork Tacos come with optional zesty soured cream, lime wedges for squeezing and tomato salsa.

a) If you don't have a microwave, preheat your oven to 220°C/200°C fan/gas mark 7 for the tortillas.
b) Halve the bell pepper and discard the core and seeds. Slice into thin strips.
c) Drain the sweetcorn in a sieve.

a) Heat a large frying pan on medium-high heat with a drizzle of oil.
b) Once hot, add the pork mince, bell pepper and sweetcorn. Fry until the mince has browned, 6-8 mins.
c) Use a spoon to break up the mince as it cooks. When the mince has browned, drain and discard any excess fat.
d) Season with salt and pepper. IMPORTANT: Wash your hands and equipment after handling raw mince. It's cooked when no longer pink in the middle.

a) Meanwhile, peel and grate the garlic (or use a garlic press).
b) Add the garlic, Central American style spice mix and tomato puree to the pan. Fry until fragrant, 1 min.
c) Stir in the water for the sauce (see pantry for amount) and simmer until thickened, 2-3 mins.

a) Meanwhile, zest and cut the lime into wedges.
b) Cut the tomato into 1cm chunks.
c) In a small bowl, mix together the soured cream and lime zest. Season with salt and pepper.
d) In another small bowl, add the tomato chunks, a good squeeze of lime and the sugar for the salsa (see pantry for amount). Season with salt and pepper.

a) Pile the tortillas (3 per person) onto a plate. Heat them through in the microwave, 850W: 50 secs / 750W: 1 min, until warm and soft.
b) If you're using the oven, pop them into the oven to warm through, 1-2 mins.
c) When the pork has simmered, season with salt and pepper. Add a splash of water if you feel it needs it.
