Instructions

  • Halve, peel and chop the onion into small pieces.
  • Heat a drizzle of oil in a frying pan on high heat.
  • Once hot, fry the mince and onion, 5-6 mins. Break up the mince as it cooks, then drain the fat.
  • Season with salt and pepper. IMPORTANT: Wash hands and utensils after handling raw meat. Cook so there's no pink in the middle.

  • Meanwhile, grate the Cheddar cheese.
  • Add the tomato puree, beef stock paste, ketchup and water for the sauce (see pantry for both) to the beef. Simmer 2-3 mins. Season with salt and pepper.
  • Lay half of the tortillas onto a lightly oiled baking tray.
  • Top the tortillas with the beef mince and grated cheddar.

  • Lay the remaining tortillas directly on top of the loaded tortillas, sandwiching them shut and lightly pressing down to keep them together.
  • Rub a little oil over the top of each one, then bake on the top shelf of your oven until golden, 5-7 mins.
  • Meanwhile, quarter, core and thinly slice the apple (no need to peel).
  • In a large bowl, mix together the cider vinegar, oil and sugar for the dressing (see pantry for both). Season with salt and pepper.

  • Add the apple and baby leaves to the dressing and toss together.
  • Quarter the quesadillas and share between your serving plates.
  • Drizzle over the burger sauce.
  • Serve the apple and baby leaf salad alongside.
