a) Heat a drizzle of oil in a large frying pan on medium-high heat.
b) Once the oil is hot, add the chicken to the pan and season with salt and pepper.
c) Fry until golden brown on the outside and cooked through, 8-10 mins.
d) IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging.
e) The chicken is cooked when no longer pink in the middle.
f) Once the chicken is cooked, pop aside to cool, 5-10 mins.
a) Meanwhile, pop the mayo in a small bowl and add the curry powder (add less if you don't like heat). Mix together.
b) Halve the seeded rolls lengthways and spread a spoonful of your curry mayo on the bottom of the inside of the rolls.
c) Spread the mango chutney on the top of the roll.
a) Pop the rocket on the base of the sandwich.
b) Pop the chicken on top.
c) Sandwich together and tuck in! Enjoy.
