
All the summer flavours of a Caprese salad, but in a sandwich! A classic combination of tomato, creamy mozzarella and fresh basil pesto, with an added kick of peppery rocket for an extra delicious lunch.

Wild Rocket

a) Thinly slice the tomato.
b) Drain and thinly slice the mozzarella.

a) Halve the seeded roll lengthways.
b) In a small bowl, stir together the fresh pesto and rocket.
c) Lay the pesto rocket on the bottom half of the roll.

a) Top the rocket with the sliced tomato.
b) Lay the mozzarella on top.
c) Sandwich on the top half of the roll and tuck in. TIP: If you have any leftover ingredients, serve them on the side as a small salad if you'd like. Enjoy!
