- Preheat your oven to 240°C/220°C fan/gas mark 9.
- Lay the chicken onto a baking tray, drizzle with oil and season with salt and pepper. TIP: Notice a stronger smell from your chicken? Don’t worry, this is normal due to packaging we use to keep it fresh.
- When the oven is hot, roast on the top shelf until cooked through, 20-25 mins. Turn halfway through. IMPORTANT: Wash your hands and equipment after handling raw meat. Cook so there's no longer pink in the middle.
- Meanwhile, heat a drizzle of oil in a frying pan on high heat.
- When hot, fry the mushrooms, 5-6 mins. Season with salt and pepper.
- Meanwhile, drain and rinse the black beans.
- Halve the ciabatta.
- Once the mushrooms have browned, add the Central American style spice mix, passata, black beans, chicken stock paste, sugar and water (see pantry for both).
- Simmer until thickened slightly, 3-4 mins.
- Once thickened, add the spinach in handfuls, making sure it's piping hot, 1-2 mins more.
- Once cooked, remove the beans from the heat. Stir in the BBQ sauce. Taste and season with salt and pepper if needed.
- Pop the ciabatta into the oven to warm through, 2-3 mins.
- When everything's ready, slice the chicken widthways.
- Share smoky beans between your bowls. Top with the chicken.
- Serve the ciabatta alongside for dipping and scooping to finish.
