Instructions

Boil Orzo

  • Boil a full kettle. Trim the green beans, then cut into thirds.
  • Pour the boiled water into a saucepan with 1/2 tsp salt on high heat. Boil the orzo, 10 mins. Halfway through cooking, add the green beans.
  • Once cooked, drain and run under cold water.
  • Meanwhile, drain the sweetcorn. Halve the lemon (see ingredients).

  • Heat a drizzle of oil in a frying pan on medium-high heat.
  • Once hot, fry the chicken and sweetcorn, 8-10 mins. Season with salt and pepper. IMPORTANT: Wash hands and utensils after handling raw meat. Cook so there's no pink in the middle.
  • Combine the harissa, lemon juice, honey and olive oil (see pantry for both) in a bowl. Season with salt and pepper.

  • Next, add the cumin to the chicken. Cook, 1 min more. 
  • Remove from the heat.
  • Add the cooked orzo, green beans, chicken, sweetcorn and rocket to the bowl of dressing. Toss to combine.

  • Share the orzo salad between your bowls.
  • Crumble over the Greek style salad cheese.
  • Enjoy!
