Cooking Steps

Get Prepped
1

a) Boil a half-full kettle.

b) Trim and halve the green beans.

c) Halve the bell pepper and discard the core and seeds. Slice into thin strips.

d) Cut the lime into wedges. Peel and grate the garlic (or use a garlic press).

Mix the Miso Peanut Sauce

a) In a large bowl, combine the peanut butter, soy sauce, miso paste, sweet chilli sauce, a squeeze of lime juice and the boiling water (see pantry for amount). 

b) Mix together well until smooth.

Coat the Chicken

a) Cut the chicken thighs into 2cm chunks. TIP: Notice a stronger smell from your chicken? Don’t worry, this is normal due to packaging we use to keep it fresh. 

b) Pop the chicken into another medium bowl.

c) Add the garlic, a drizzle of oil and a third of the miso peanut sauce to the chicken.

d) Mix together so the chicken is well coated. IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging.

Time to Air-Fry

a) Place the green beans and pepper into your air fryer basket. Drizzle with oil, season with salt and pepper, then shake and toss to coat. Spread out in a single layer.

b) Lay the chicken on top of the veg

c) Air fry at 200°C until the veg is tender and the chicken is cooked through and golden, 14-16 mins. IMPORTANT: The chicken is cooked when no longer pink in the middle.

d) Give the basket a shake halfway through. TIP: Work in batches if needed.

Add the Noodles

a) Once the chicken and and veg is cooked, add the udon noodles to the air fryer basket. Drizzle over a little oil. Air fry at 200°C until piping hot, 5 mins.

b) Once ready, use a fork or tongs to gently separate the noodles and toss together with the chicken and veg.

c) Transfer the chicken, veg and noodles to the bowl with the remaining miso peanut sauce

d) Toss together so everything's well coated. Add a splash of water if it's a little too thick.

Serve
6

a) Share the noodles out between your bowls. 

b) Serve any remaining lime wedges on the side for squeezing over. 

c) Sprinkle over the sesame seeds to finish.
