Cooking Steps

Cook the Chips

Chop the potatoes lengthways into 1cm slices, then chop into 1cm wide chips (no need to peel).

Place the chips into your air fryer basket. Drizzle with oil, season with salt and pepper, then shake and toss to coat. Spread out in a single layer.

Air fry at 200°C until golden, 18-22 mins. Give the basket a shake halfway through.

Meanwhile, cut the tomato into 1cm chunks.

Drain the mozzarella, then cut it in half. Slice one half of the mozzarella, then cut the other half into 1cm chunks.

In a small bowl, combine the sun-dried tomato paste and honey (see pantry for amount). Set aside. 

Season and Shape the Mince

In a large bowl, combine the beef mince and savoury seasoning. Season with pepper and mix together with your hands.

Roll into even-sized balls, then shape into 1cm thick burgers, 1 per person. TIP: The burgers will shrink a little during cooking. IMPORTANT: Wash your hands and equipment after handling raw mince.

Once the chips are ready, transfer them to a bowl and cover to keep warm.

Place the burgers into your air fryer basket. Air fry at 200°C until cooked through, 10-12 mins. Turn halfway through. IMPORTANT: The burgers are cooked when no longer pink in the middle.

Finishing Touches

Meanwhile, halve the burger buns.

Once the burgers are ready, open the air fryer basket and top each one with the sliced mozzarella

Add the burger buns to the basket and air fry until the cheese has melted and the buns are warmed, 1-2 mins.

When everything's ready, spread mayo (see pantry for amount) over the bun bases. Top the bases with the cheesy beef burgers then drizzle over the sun-dried tomato honey. Top with a small handful of rocket, then sandwich shut with the bun lids.

In a medium bowl, toss together the tomato, remaining mozzarella chunks and remaining rocket with a drizzle of oil

Serve the burgers with the chips and salad alongside. Drizzle the balsamic glaze over the salad to finish.
