Instructions

Cook the Rice
1

a) Boil a half-full kettle.

b) While it comes to the boil, halve, peel and chop the onion into small pieces. Trim the green beans and chop into thirds.

c) Pour the boiled water into a large saucepan with 0.25 tsp salt on high heat. Add the rice and cook for 10-12 mins.

d) Once cooked, drain in a sieve, then pop it on top of the pan and allow to steam until ready to serve.

 

Fry the Veg

a) Meanwhile, heat a large frying pan on high heat with a drizzle of oil.

b) Once hot, add the onion and green beans to the pan, Season with salt and pepper and stir-fry until starting to soften, 3-4 mins. 

c) While it cooks, cut the tomato into 1cm pieces. Peel and grate the garlic (or use a garlic press).

Add the Flavour

a) Once the veg has started to soften, add the beef mince and fry until browned, 4-5 mins. Use a spoon to break it up as it cooks. IMPORTANT: Wash your hands and equipment after handling raw mince. 

b) Once the mince is browned, drain and discard any excess fat. 

c) Next, lower the heat and add the garlic, tomato puree and rogan josh curry paste.

d) Stir-fry for 1 min. IMPORTANT: The mince is cooked when no longer pink in the middle.

Sauce Things Up

a) Add the tomato chunks, beef stock paste and water for the beef (see pantry for amount) to the mince.

b) Season with salt and pepper, then mix well.

c) Cover with a lid (or foil) and simmer, stirring occasionally, until the tomato has softened, 6-8 mins.

Combine and Stir

a) Once the tomato has softened, fold the cooked rice gently into the beef mixture. 

b) Stir in the mango chutney then taste and season with more salt and pepper if needed.

c) Add a splash more water if it's a little dry then remove from the heat. 

Serve
6

a) Share the beef pilaf between your bowls.

b) Drizzle over the yoghurt to finish.
