Pairing chicken breast with streaky bacon rashers, this indulgent Butterflied Cheesy Chicken and Serrano Ham Burger brings a restaurant quality experience straight into your home.

Preheat your oven to 220°C/200°C fan/gas mark 7.
Chop the potatoes lengthways into 1cm slices, then chop into 1cm wide chips (no need to peel).
Pop the chips onto a large baking tray. Drizzle with oil, season with salt and pepper, then toss to coat. Spread out in a single layer. TIP: Use two baking trays if necessary.
When the oven is hot, bake on the middle shelf until golden, 30-35 mins. Turn halfway through.
Meanwhile, peel and grate the garlic (or use a garlic press).
Thinly slice half the tomatoes. Chop the remaining tomato(es) into 1cm chunks.
Halve the burger buns. Grate the Cheddar cheese.
Lay the chicken breast onto your chopping board, place your hand flat on top and slice into it from the side until there's 2cm left (be careful not to slice all the way through).
Open it up like a book. Repeat with the other breast(s) - you've butterflied your chicken! IMPORTANT: Wash your hands and equipment after handling raw chicken and its packaging.
Heat a drizzle of oil in a large frying pan on medium-high heat.
Once hot, add the chicken and cook for 3-4 mins on each side.
Transfer the chicken to one side of a baking tray and top with the cheese. Lay the Serrano ham onto the other side of the tray.
Bake on the top shelf of your oven until golden and cooked through, 5-6 mins. IMPORTANT: The chicken is cooked when no longer pink in the middle.
Meanwhile, in a small bowl, combine the pesto and mayonnaise (see pantry for amount).
A few mins before everything's ready, pop the burger buns into the oven to warm through, 2-3 mins.
When everything's ready, spread the pesto mayo over the bun bases and lids. Top the bases with the tomato slices, cheesy chicken and Serrano ham. Sandwich shut with the bun lids.
Share the burgers and chips between your plates.
Pop the tomato chunks and rocket in a serving bowl and drizzle over the balsamic glaze to finish.
