
Give weeknight dinners a spicy kick with our Peri Peri Glazed Rump Steaks. The main flavour here comes from peri peri, which contains smoked paprika, ancho chilli powder, ground cumin and oregano, for a smoky, spicy and slightly sweet kick.

Preheat your oven to 220°C/200°C fan/gas mark 7. Remove the steaks from your fridge to allow them to come up to room temperature.
Pour the water for the rice (see pantry for amount) into a medium saucepan with a tight-fitting lid.
Stir in the rice and ¼ tsp salt and bring to the boil. Once boiling, turn the heat down to medium and cover with the lid.
Leave to cook for 10 mins, then remove the pan from the heat (still covered) and leave to the side for another 10 mins or until ready to serve (the rice will continue to cook in its own steam).

Meanwhile, halve, peel and chop the onion into small pieces.
Peel and grate the garlic (or use a garlic press). Cut the lemon into wedges.
In a small bowl, combine the hot sauce with half the honey (see pantry for amount). Set aside.

Heat a drizzle of oil in a large frying pan on high heat. Season the steaks with salt and pepper.
Once very hot, lay the steaks into the pan and fry until browned and medium-rare, about 6-8 mins depending on their thickness. Turn halfway through. TIP: Cook each side for 1 min more if you like it more well done.
In the last min of cooking, sprinkle over half the peri peri seasoning and turn to coat, 1 min.
Once cooked, transfer to a board, cover with foil and allow to rest for a couple of mins. IMPORTANT: Wash your hands and equipment after handling raw meat. The steak is safe to eat when browned on the outside.

Pop the (now empty) frying pan used for the steaks back on medium-high heat. Add an extra drizzle of oil if needed.
Once hot, add the onion to the pan and stir-fry until softened, 4-5 mins.
Stir in the garlic and the Central American style spice mix. Stir-fry for 1 min.
Add the remaining honey, water for the sauce (see pantry for both amounts) and the chicken stock paste. Bring to the boil, then simmer until slightly thickened, 1-2 mins.

Stir the cooked rice into the frying pan with the sauce. Add the peas, butter (see pantry for amount) and the remaining peri peri seasoning. Toss together to evenly combine. Cook until piping hot, 1 min.
Remove from the heat and stir in a good squeeze of lemon juice. Taste the rice and season with salt and pepper or an extra squeeze of lemon juice if needed.
Once everything's ready, thinly slice the steaks into 1cm thick slices.

Divide the rice between bowls and top with the steak.
Spoon over the honey hot sauce. Drizzle with the mayonnaise (see pantry for amount).
Scatter over the rocket leaves. Serve with any remaining lemon wedges on the side to finish.
